Place nuts onto a metal cookie tray in a single layer
Using a timer (app on your phone), roast at 180 degrees celsius (356 degrees fahrenheit) for 5 minutes
When the timer goes off, use the back of a clean tea-towel or a wooden spoon to shuffle and turn around the nuts so that they cook evenly. Move the nuts on the outside of the tray (that are cooking more quickly) to the inside of the tray. Set the timer for another 5 minutes and keep roasting.
When the timer goes off again, shuffle around the nuts, set the time for 2 minutes and keep roasting
Continue to check and re-set the timer every two minutes until the nuts are done to your liking (about 6 minutes, so 3x 2 minutes for roast almonds, about 4 minutes for cashews)
Keep a close eye on them until they are done – they should look golden brown all over
Let the nuts cool completely before placing them into glass mason jars
