Perfect Dry Roasted Nuts

Snacks! More snacks! Another great and filling snack after the other week’s Sweet Potato Toasted Crackers, are roast nuts. They’re the perfect portable paleo snack, can be used in multiple dishes, you can make nut butter out of them, they’re nutrient dense and taste pretty darn delicious.

However, did you know that most store bought roast nuts aren’t actually roasted – they’re deep fried (check the label for oil as an ingredient)! And you can bet they won’t have been fried in good oil that’s for sure. Eww! So what’s the solution? Make your own of course!

So that brings me to this week’s recipe – perfectly roasted nuts every time!

You wouldn’t believe how many times I have put some nuts on to roast and then (what feels like 2 seconds later) I smell that tell-tale carbon wafting from the oven. DAMN, burnt nuts AGAIN – and those things aren’t cheap. Now that I have this method though, burnt nuts are a thing of the past. They’re perfectly roasted to my liking every time YAY!

Pour you raw nuts in a single layer onto a cookie tray (cook them one tray at a time).

Place the nuts on the middle tray in the oven at 180 degrees celcius / 256 degrees fahrenheit (you don’t need to pre-heat the oven) and set your timer (mobile phone, or a kitchen timer) for 5 minutes.

The timer is ESSENTIAL! Trust me, without it you are way more likely to get distracted or forget about the nuts and then BOOM – you’ll be crying over those little burnt pieces. Every phone will have a timer in the clock app – use it.

After 5 minutes, use the back of a clean tea-towel or a wooden spoon to shuffle and turn around the nuts so that they cook evenly. Move the nuts on the outside of the tray (that are cooking more quickly) to the inside of the tray. Set the timer for another 5 minutes and keep roasting.

When the timer goes off again, shuffle around the nuts, set the time for 2 minutes and keep roasting. Continue to check and re-set the timer every two minutes until the nuts are done to your liking.

Keep a close eye on them over the last few minutes until they are done – they should look golden brown all over. Let the nuts cool completely before placing them into glass mason jars.

Ingredients

  • 500 g raw nuts e.g. almonds or cashews

Instructions

  • Place nuts onto a metal cookie tray in a single layer
  • Using a timer (app on your phone), roast at 180 degrees celsius (356 degrees fahrenheit) for 5 minutes
  • When the timer goes off, use the back of a clean tea-towel or a wooden spoon to shuffle and turn around the nuts so that they cook evenly. Move the nuts on the outside of the tray (that are cooking more quickly) to the inside of the tray. Set the timer for another 5 minutes and keep roasting.
  • When the timer goes off again, shuffle around the nuts, set the time for 2 minutes and keep roasting
  • Continue to check and re-set the timer every two minutes until the nuts are done to your liking (about 6 minutes, so 3x 2 minutes for roast almonds, about 4 minutes for cashews)
  • Keep a close eye on them until they are done – they should look golden brown all over
  • Let the nuts cool completely before placing them into glass mason jars
