Cut the lime in half and remove the rind from one half.
With the other half, cut a small wedge and then slice it through the middle (but not through the skin).
Use this wedge to wet the rim of a pair of large glasses and then dip and twist them into a bowl of desiccated coconut to create a coconut rimmed glass.
Place the frozen watermelon, coconut water and ½ lime into a blender.
Squeeze in the juice from your leftover ½ lime and lime slice and blend until smooth.
Use a spoon to scoop the mixture into your glasses (careful not to ruin the coconut rim). Garnish with an extra lime wedge.
