The trick with reducing your alcohol intake but still feel like you’re not missing out is to spoil yourself with something both delicious and fancy 😀 You really won’t miss the alcohol and you’ll be the envy of the party with a big glass of refreshing frozen and zesty watermelon drink in hand. We get some pretty huge watermelon’s here in Australia; and try as I might sometimes I just can’t eat it all in time. So I usually chop and freeze about a half of any watermelon I buy so I can grab it out of the freezer at any time and add it to smoothies, juices and chill cocktails!
Technically you can do this with any fruit (and vegetable) – just chop, chuck it into a bag and freeze. It’s a great way to minimise food wastage and handy for quick on-the-go meals.
Start by cutting a lime in half and removing the rind from one half.
With the other half, cut a small wedge and then slice it through the middle (but not through the skin). Use this wedge to wet the rim of a pair of large glasses and then dip and twist them into a bowl of desiccated coconut to create a coconut rimmed cocktail glass. So pretty!
Place the frozen watermelon, coconut water and the ½ of lime flesh into a blender. Squeeze in the juice from your leftover ½ lime and lime slice and blend until smooth.
Use a spoon to scoop the mixture into your glasses (careful not to ruin the coconut rim). Garnish with an extra lime wedge!

- 2 cups frozen watermelon
- 500 ml coconut water
- Juice of ½ a lime
- Flesh of ½ a lime
- Desiccated coconut
